Because beef jerky is meat minus the water content. So the protein is concentrated. The same way an ounce of raisins has more calories than an ounce of grapes.

an ounce of beef jerky is a lot more meat and a lot less water than an ounce of regular beef because with regular beef you are eating all of the water content which doesn't have any protein in it.
