6 cups beef broth
3 egg whites
6 oz ground sirloin or beef
4 peppercorns
1/2 tsp salt
1/4 cup sherry
5 green onions, sliced
Place broth in a large pot. Bring to a boil. In a medium bowl, mix together the egg whites, beef, peppercorns and salt. Place this "raft" (meat mixture) in the broth and stir well. Add sherry and onions. Left the raft rise to the surface and lower heat to a gentle simmer. Cook for one hour, then strain through cheesecloth.
