Lunch Ideas

Hi everybody. I am a 2nd grade teacher and desperately need lunch ideas. I need something quick as I only have about 15 minutes to sit and eat. I have a microwave in my room that I can use. And I can snack if I get hungry. Typically I take a sandwich or grab something from the lunchroom (when it looks good and i can tell what it is!). But, after surgery, I can't eat sandwiches anymore. I'm not good with wraps either. They get stuck. Any ideas?????

Chicken salad, cottage cheese with fruit, Greek yogurt (especially with PB2 added!). Be very careful with portion sizes, you may need to size down lunch with only 15 minutes to eat. It takes me that long at least with all my meals. Protein bars or shakes for snacks.

Tuna fish kits, lettuce rollups (just rollup in the lettuce leaves what you like in your sandwich), soups, left over meat from dinner the night before with a piece of fruit, frozen dinners, I like the new Adkins ones as the carb count is lower...hope this helps!

Have you tried making a sandwich with one of the new flatbread/thin breads? I take a sandwich every day in my cooler using the flat thins and have no problem eating them. When my band is a little tighter, I can eat about half of the sandwich and then eat just the insides later when I need more protein.

Also, in the cooler weather I make big batches of chili which I freeze in individual servings. I add lots of extra beans and use only one pound of very lean ground beef. After the chili has cooked and been frozen and thawed, the ground beef doesn't give me any trouble.

I'm a teacher as well and in that lunchtime rush I really need as much protein as possible so tuna was my best friend I wrapped in lettuce and ate it with a cheese stick and yogurt
