Cottage cheese

I don't like the way cottage cheese looks, so I was wondering what to mix it with. Any suggestions?

Description

Fresh mozzarella is expensive. I love caprese and came up with this. I use fat-free cottage cheese to make it really low calorie.

Ingredients

1 cup fat-free cottage cheese

2 tomatoes, chopped

1 tablespoon chopped fresh basil leaves, or to taste

1/2 teaspoon salt

freshly ground black pepper to taste

2 tablespoons balsamic vinegar (optional)

Directions

Combine cottage cheese, tomatoes, basil, salt, and black pepper in a bowl. Stir in balsamic vinegar.

I like cottage cheese, but Triple Zero Oikos yogurt is so good and I think more protein than cottage cheese. It is not tart like a lot of Greek yogurt.

Add it to scrambled eggs - extra protein and you don't have to see it.
