Lunch Ideas

Hi all, I am in desperate need of lunch ideas. Please nothing more with tuna involved or any fish.. I swear I will be sprouting gills very soon!! I need something different that is quick and not requiring too much to make it.

One of my favorite lunches is ground chicken' date=' quinoa, red, yellow and orange peppers and mushrooms. Cook the quinoa like you normally would (I use a rice cooker) pan cool the chicken then when slightly cooked add in all the veggies. I often have a hard boiled egg mushed up with cottage cheese and spring onions on a bed of shredded lettuce. Another favourite is a veggie burger with some beans on top. But having said that, the beans in the US are not nice like we get here in Australia. I am a little tight at the moment and am eating a 1/4 cup of muesli with low fat yogurt a fair bit.

What kind of beans do you use. I love veggie burgers. My favorite beans are black beans but I also like kidney, pinto, and lentils. Speaking of lentils I'm really craving some curried lentils I had a while back.

I eat Heinz Baked beans in Ham sauce. 90 calorie and 6 g of protein per small tin and very yummy.
