  1. Hey y'all. Exhausted here. Did my brother's birthday menu...turned out great! Everything was a hit, especially the potstickers. (Now I know why they're called potstickers! Lol...they literally stick to the pot for a moment). Haha! Here are some pics. Enjoy! Pics in order: cucumber Asian salad, spicy thai quinoa salad, spicy green beans, and veggie potstickers.
  2. That's what I'll have to do...pray. Peru...now that's a long ways away! Is your husband's family there?
  3. I do tons of quinoa. That's my go to grain. It really is wonderful in just about anything. Congrats on the eliminations! I think as time goes on you'll find it much easier to forego the cheese. I do love cheese too, but I haven't used it much these days besides one of last week's meals. Another benefit is that it's great on the pocketbook! ? Eating healthy isn't expensive, at least for me.

  5. sooooo....my husband was approached with a job opportunity. I've spent a lot of time researching this little place that is 2146 miles from my home; it's Washington state! Lots of deciding to do. He went ahead and applied for the position, which he'll probably get. Lots of excitement and scary moments combined. We're quite settled in south Texas (been here for 26 years) and we like the idea of change but those thoughts are creeping in! I consider myself open to change, but when it's about relocating your whole family to the other side of the country with no family or even friends around, well, it's a lot to think about.
  6. So this! I don't count and my doc/nut never gave me numbers of caloric goals. They don't want us to be on another diet!!! Find a healthy food choice lifestyle that's sustainable and stick to it.
  7. So I spent some time coming up with a plant based menu for my brother's birthday party that I'm hosting at my house tomorrow. He requested a spicy Thai quinoa salad. I'm going to make a thai cucumber salad and spicy green beans. If I have time and the energy, try to do some veggie pot stickers. Besides the quinoa salad, everyone will be my guinea pigs tomorrow. ? I've noticed something, if a conversation doesn't exactly turn towards a plant based diet, probably best not to broach it. Lol. Live and learn. I'll wait for my cues.

  9. Omg hon, I think you're paving the way for us who are a little reluctant to tofu!!!! That looks so good! I'm going to for sure include one of the recipes in this next weeks set of meals. it'll be my first try...suspense!
  10. I always had tummy issues before going WFPB. I don't anymore unless I decide to eat something that has a lot of cheese; so I stay away as much as possible (except my yummy black bean nachos-of which I'll definitely opt for the tortilla nuked in the microwave next time!!). It's nice not having issues in He gastrointestinal area and such. Your body will be so happy about it too. I'm happy you're reading the book! It just makes sense, huh? ?

  15. This is true. I've read many things on how the body processes fat/sugar and and watched a video of actual cancer cells showing growth after being exposed to the fat and sugar. The doc at MD was very good to put your uncle on the plant based. My mother is stage 4 lung cancer and she won't even think to do it...smh, I'm glad your uncle at least prolonged his life for 2 years instead of the couple of months he was given. That in itself, is proof that plants can help heal your body.
  16. Occasionally I mosey on over to other threads and start reading. I'm amazed at how many people have heartburn after the sleeve. I had it really bad pre-sleeve and haven't had anything at all post. I took my ppi until it ran out too. Still nothing and we're going on four months post now. I'd like to know, what are these people are eating and how much?

  18. Hey hey, it's not vanity unless all we do is chase after how we look. Heck, I rarely wear makeup anymore and my hair is usually up in a ponytail or bun. So, I say let's go for it when/if it's warranted for us to feel better about ourselves. Hubbies love us for who we are no matter our decision right? Well, in addition, we can give them a bit more spice too. Hahaha!!!!
  19. Oh my... I can't stand not having much to do at work, I need to be busy, which I am now. Thankfully. Still kind of have my moments, but today was much better. If I became a coach, I'd want to volunteer for it. Right now I've got a few young women at my church asking me to help plan plant based meals. Lol. One has asked me to help her budget so she can eat better and save at the same time. Tonight I just introduced another I met to maybe think of the benefits of going plant based- it helped that three others around us chimed in that they eat this way too. Haha! I love it! I believe God is definitely changing me so I could be there for others. Sooooo, I was curious. I weighed in this morning at 202. Slowly but surely it's coming off. I was surprised actually. im pretty sure I'll hit the hundreds before the 4month mark. If I don't, that's ok too. I'm really quite fine where I'm at. With that said, I am really hoping more of my belly skin bounces back!!! lol I may have to do a TT down the road after all . We shall see!
  20. Today was a busy day. I've had out cleaning lady from work make me do a little spin cause she just couldn't get over how "small" I look. ?. Managed to get through my day. Had my brother and a mutual friend over for dinner tonight. Made a pasta dish I'll be making again, for sure, even though I only ate like three of the little pastas. I'll post the recipe, some kale salad (my fave) and garlic bread for them; but had a couple of small bites. I'm already looking forward to the weekend...just don't feel up to working these days. I feel like I'm supposed to be doing something else, but I don't know what. Time will tell I guess.   21. I just feel dread. I will absolutely be devastated if it hits FL hard. For sure the islands. my brother was telling me what the root meanings of these hurricanes are. Scary part, they're all fitting for what they've become. Harvey: "Battle worthy" Irma: "Goddess of Destruction" Cat 5 Jose: "May He add" (its following Irma) I hope all in FL are being smart and evacuating...just in case.
