Ratatouille

This tastes great and is VERY low fat. A great way to get your veggies! I don't really measure anything, this is just that easy. You can't mess it up!

Ingredients :

Red bell pepper chopped into 1 inch pieces

eggplant chopped into 1 inch pieces

zuccine also chopped into 1 inch pieces

mushrooms- fresh sliced

green onion chopped

fresh Tyme chopped

fresh Basil chopped

Newman's Own Marinara in the jar

sea salt and pepper

any low fat summer sausage sliced

Preparation:

Place all diced veggies into a casserole dish and sprinkle Tyme,Basil, sea salt and pepper over the top. Place in oven and bake for 10 minutes on 400. Take out and add sliced summer sausage and pour Marinar over the top. Put in oven and bake for another 20 minutes. Take it out and give it a good stir. Oh, so good! :)

I made this last night for dinner and it was a huge success. I think it helped that my son really loved the movie Ratatouille. :thumbup: Both hubby and son came back for seconds. :biggrin2:

I'm so happy to hear you liked it. It's sooo hard to feed children and eat healthy without making a buffet to cover everyone. I have a 13 yr old and a 4 yr old. They would be happy with mac-n-chez and chicken nuggets every night, but that doesn't help me and my husband eat right. It's so tempting.

Sounds really good. I think I'm going to try this. Seafood is the only meat I'm eating these days, so I think I may boil or grill some shrimp and add it at the end instead of the sausage or just omit the meat altogether. I think it would be good either way.

I was watching the movie Ratatouille last night and I told my hubby I wanted to make this. Can't wait to try it, probably next week after I buy groceries again. I searched the net looking for a good recipe and yours looks better than any I found. Thanks for sharing.
