There were some carbs (oatmeal, mashed potatoes) on my soft foods diet. I do a 1/4-1/3 cup of oatmeal 6 mornings a week (done as refrigerator oats, mixed with protein powder, chia seeds, greek yoghurt, and almond milk).

Mine says I can start incorporating starches when I have lost 65-75% excess fat or at month 6 .. i believe i have lost 75% but I’m 5 months so I’m not sure what to do

We all recover at different rates, maybe you were built a Speed Buggy instead of a sluggish jalopy like me. I would follow my surgeon's rules, he knows your case, your body strengths much better than I can out in Virtual-Land on Bariatric Pal.
