Has Anyone Made Pumpkin Soup

:rolleyes:I am in my 3rd week after Lap Banding. I am on soft diet, yogurt,sf pudding,sf jello, thin creamed soups,protein shakes.

I bought a can of pumpkin and would like to make pumpkin soup. Has anyone made pumpkin soup? Help!!!!:rolleyes

I make a great pumpkin soup that is sweet yet savory. It is Emeril's recipe. Google it by typing in Emeril pumpkin soup. It uses a chicken stock base and has peanut butter in it (as a thickener), so make sure it is the right recipe. I took it to a bonfire one year and served it in an actual pumpkin. YUM!

Oh yes, I take a carton of Velish Pumpkin soup or some homemade pumpkin soup (cut up a butternut pumpkin - you guys call it butternut squash I think - chicken stock, onion, its too easy) and add a huge dollop of peanut butter, some sour cream and a good amount of curry powder. I got that recipe here and it is sooooooo good. I make it all the time, it'd be perfect for thicker liquids.

No, but I love it. I went on a cruise for my preop diet...knew I'd crack if I tried to do it at home...being a food addict.

The first night at dinner, we had pumpkin soup for the soup. WOW! I loved it. So I had 3 bowls, instead of the main course.

I guess I need to get a recipe for that one!

Lessenless, Thank you for the tip about the black bean/pumpkin soup. I went to that site, made a copy and made the soup last nite. Very, very good and interesting--kind of a southwest-mex type soup. Loved it and I will be making it again I'm sure.. Victoria52

Ok - OMG - I had this for the first time the other day and it was SOO good. Nice and hearty, but more like a dessert.</.

It was at our local organic grocery store. The listed ingredients were "pumpkin, heavy whipping cream" but there was other stuff in it, I could see the seasonings & seeds or whatever they were.

I went back the same day and bought a big container to take home for dinner (it was the soup on the salad bar). They haven't had it since. :)
