Avocado and egg

As seen on Facebook I tried cooking an egg in half an avocado this morning. Not as easy as it looks. You have to scoop out most of the avocado in order for a large egg to fit into the hole. I failed miserably at that part and had to clean up most of the egg-white from my counter. I cooked it in my toaster oven at 450 for about 10 minutes. It need some seasoning or maybe a little salsa but was pretty tasty and very satisfying.

    I shop at bjs but they have 2oz packages of wholly guacamole. I use part of that with my eggs and add low fat mozzarella cheese. My fav meal so far.

Sounds interesting, I've been loving those avocado's since surgery. Eggs on the other hand have really turned my stomach on occasion to the point I'm now avoiding them. Perhaps in an avocado would solve the problem.
