How the heck does this happen!

How do I weigh 221 on one day and then 223.8 a day later? I haven't ingested 3500 calories in a single day since pre surgery (last November). How can I possibly gain almost 3 pounds in less than 2 days when at best I'm eating 1200 calories?

Water weight most likely. Happens often after eating higher sodium foods or drinking a lot of water

Lucky you are not a girl! With salty foods and the right time of the month, a girl can go up several pounds in a day.
