Just want to share with you one of the recipe.
Zucchini pancake:
1 zucchini (or 2 small) - about 500 g
1 egg or replace with eggbeater
4-5 tbsp oatmeal
salt
spices
Fresh herbs (dill, parsley)
1 clove garlic (optional)
Wash zucchini, peeled, grated on a medium grater. Gently squeeze the juice. Beat the egg with salt and spices, pour into zucchini, put the oatmeal, chopped herbs and crushed garlic. Stir the mixture well, if you select a lot of juice, then drain it.
Preheat a frying pan cooking oil, a tablespoon spread pancakes and fry over medium heat on both sides until golden in color. Serve with Greek yogurt.
