I was watching the Nate show yesterday morning- not a huge fan of the show, but anyways he had a cooking section and actually had a great idea I am going to use when I go back to work.

Use a muffin pan for making self-contained scrambled eggs. You can add whatever you want, cheese, onion, salsa, etc. But, when they are done, they come out like mini muffins. That makes them easy to take to work for lunch. I am going to try and be sure they don't get overdone- but I'm excited to try this.

I used to make those a lot when I was on Weight Watchers - we called them "crustless quiche" and I would add cheese, diced veggies, finely chopped bacon or sausage (turkey sausage might be a good option post-op).
