I'm still in the mushy stage and I have been making omelettes with the liquid eggs in a box. I prefer them microwaved because when i tried it on the stove all my meat was crumbling out. I was watching my husband make a homemade "eggmcmuffin" and completely forgot that I used nuke my eggs.
Basically I take a ceramic/microwave safe bowl and spray it with pam or any nonstick cooking spray. I measure out about 3.5oz of liquid eggs (i love the southwestern style with the peppers in it) and chop small pieces of a half a piece of deli turkey into it, a dash of h2o to keep it from drying out and towards the last minute or so in the microwave I stop and throw some fat free chedder cheese shreds on it. A couple of minutes into cooking I usually stop it and flip it over as well.
