I just saw today a delicious liking parfait she made with non fat cottage cheese, chopped apples, and a little splenda, vanilla extract, and cinnamon. She also made a Denver omelet in a mug in the microwave using egg beaters, and you could sub out any toppings you want.

Just so many good ideas!
