Cod Parmesan (Kinda)

Not a big fish fan, but I found some wild pacific cod and picked it up. Trying to figure out how to cook it, I bought some Italian Bread crumbs, dipped the Cod in milk, coated them with bread crumbs, then put the fillets into a hot pan with Olive oil and crushed garlic. Cooked the fish until it was opaque (turning half way through, opened a bottle of Marinara sauce (Spaghetti sauce to the heathens), poured a generous helping of that over the fish, topped it with part skim mozzarella and let it simmer for about 5 minutes covered.

Should work with any mild white fish.

My go-to fish recipe is to coat fillets with McCormick seafood rub, melt 1 tablespoon of butter in pan, add fish, cook 3 minutes on first side, flip, add a splash of white cooking wine, then some veggie stock, cover and let it steam until done. Can always add 1 tablespoon of flour to pan once fish is removed and a splash if cream if you want a sauce.
