I love spinach fresh for salads an frozen for cooking. But canned yewed!! its mushy yes an the color is funky prob. from the process. Your recipe sound good though. I would just use thawed spinach well drained an make it.

I would recommend the frozen spinach. I cannot eat fresh spinach yet. I have tried on several occasions, I just can't chew it up enough. Your recipe does sound yummy. Let us know how it turns out.

I eat spinach daily, either baked into quiche or raw as the leafy greens in my very small salad. I tolerate it better raw, as the frozen spinach I use in the quiche can be stringy at times.

I would consider it a "mushy", just be careful of the stringy fibers. Your recipe sounds good!

i make a spinach souffle it is very yummy and also very soft,i never thot of it being a mushy until now,duh! i feel like a dork
