Meatloaf recipe made with ground chicken

Hi,

I just made this recipe today and it turned out awesome. I made it up myself and just put in stuff we can have. It has plenty of veggies because I always sneak them into any casserole that I can. Shhhh, don't tell the hubby :juggle::lol: I put ketchup on top of mine but it'd be good with chicken gravy too I think. I also divided mine up into 4 containers and froze 3 of them.

1.5 pound ground chicken

1/2 large green pepper (chopped in food processor)

1/2 large onion (food processor)

2 small carrots (food processor)

1 tbs. worchestershire sauce

2 tbs. splenda brown sugar blend

2 eggs

1 cup of panko bread crumbs

1/2 cup fat free half & half

1 tsp. black pepper

salt

1 tbs. garlic powder

2-3 tbs. ketchup (for top of meatloaf)

Chop green pepper, onion and carrot in food processor. In large bowl add all ingredients except ketchup, put as much salt as you like, I can't use salt. Combine together. Spray a baking dish (I used a pie pan) with non stick cooking spray. Add meat mixture. Put ketchup on top and bake at 375 for 30 - 45 minutes.

Calories 180, Carb 11.1, Protein 12.8

I thought it was a really good way to use ground chicken--I can't have hamburger yet.
