This recipe requires a trip to the Indian or middle eastern food market but it's one of my favorite dishes. Luckily, lentils are on my doc's low carb foods list so I will still be making this.
Don't let all the ingredients fool you - it's very easy to make.
2 cups red lentils (masoor daal)
1 large onion, diced
1 tablespoon vegetable oil 2 tablespoons curry paste
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon white sugar (or splenda)
1 teaspoon minced garlic
1 teaspoon ginger root, minced (or 1/8 tsp dried ginger)
1 (14.25 ounce) can tomato puree (or chopped tomatoes w/liquid)
Directions
This is a pretty forgiving recipe. I've added vegetables (zucchini and califlower) and meat (chicken) to it and taken things away (onions) it still turns out great.
