Beet chicken salad

I just had a yummy beet chicken salad that my wide taught me how to make a couple weeks ago. And....I made it myself!! Joy joy.

3 oz chicken (I use canned chicken for convenience).

1 small beet sliced into cubes.

3 slices of cucumber cubes.

.5 ounce blue cheese crumbles

1 tbsp Tsatziki sauce (we made a vsg friendly version)

Throw in a bowl, mix and enjoy. The only thing that is missing is some farrow or quinoa to round out the nutrients. I failed to locate some to add.

It was from a package of pre cooked roasted beets from costco. I surprised myself this morning in preparing this. I am no chef and definitely no aspirations to be one. My wife wears the chef hat in the house. However, I found myself wanting to prepare it this morning instead of the usual quick lean Protein (eg chicken) grab. Watch out. I could give the chefs on "the chew" show some competition. :)

HAHA! I'll be sure and let Chef Boyardee know he has competition :P I love beets, always have so that sounds soooo good! Both the hubby and I like to cook...I'll have to make that, thanks for the idea/recipe :)

You could use goat cheese also. I love feta cheese in salads and in scrambled eggs. Just a little garnish.
