Ideas for soft food stage

Looking for ideas of what to eat in the soft food stage...I'll be in it for 2 weeks, and I don't want to get tired of the same things. Please, share some ideas with me! :)

here is what my sheet says..

Ground lean meats (Meatloaf, meatballs, hamburger)

poultry or fish cooked moist and soft

chicken or beef stew

Chili

Tuna, chicken or egg salads

scrambled eggs

Beans

Soups

soft cheeses

yogarts

soft veggies (avoid corn, asparagus and salads)

fruits without skins or seeds

mashed ripe banana

citrus without membrains

high Protein Cereal like kashi

hot cereals like cream of wheat and oatmeal

mashed potato

whole grain crackers, wheat thins, saltines, cheese its / nips

avoid bread, Pasta and rice

and anything you where allowed on liquids as well.

I made a really good tuna casserole last night:

6oz tuna

1 egg

2T greek yogurt, plain

2T cottage cheese

garlic powder

onion powder

cheddar cheese, grated

pureed everything together, except the cheddar. poured into 2 mini cocottes, topped with cheddar, and baked at 350 for maybe 20-30 min. 1 ramekin has been 3 servings, and i just reheat as needed. the cocottes do a great job of keeping the food warm while you eat, but ramekins or other small dish would work fine.

also did a quiche thing - 1 egg, ricotta cheese, cheddar. Mixed egg and cheese, poured into a cocotte, topped with cheese, and baked for about 20 min. The tuna casserole is my favorite though.

shrimp cocktail ( I found low sugar cocktail sauce at Trader Joes)

tuna salad

chicken salad

lasagna without the pasta baked in muffin cups or mini bread pans

refried beans with melted cheese and Greek yogurt

cottage cheese with diced pears or peaches in juice (drained)

veggie burger patties

make loaded potato soup with half cauliflower use high protein chicken stock and top with cheese and Greek yogurt
