I absolutely LOVE LOVE LOVE the idea of this forum! Just wanted to express that and that I do have a recipe, but I dunno how many calories because I havent made it in about a month

Stir Fry Green Beans!

*1 Can green Beans (regular or long)

*1 Can potatoes

*1 Can Rotale tomatoes

*Turkey bacon (or any lean meat)

* 1 Garlic clove minced

*1/2 cup onion

*1/4 cup bell pepper

*Minced Onion (Spice)

This recipe is a concoction that I made up that I really like! You may have to alter it for the lowest calories possible. Use a medium-sized, deep skillet to sautee the onion and bellpepper, then add garlic and minced onion (but not till clear, just until soft), you can use a light spray instead of butter (thats what I do). Then drain and add green beans and stir around for about a minute, then add drained potatoes and tomatoes and let simmer. While this is simmering, cook your lean meat in another skillet or microwave (whatever is the lightest way to do it) so that it will be crunchy and/or flavor full. Stir your green beans and add salt and pepper and possibly more garlic to taste. Also, whenever I make this I usually end up adding more stuff in the cabinet and fridge (like cajun spice and garlic salt), but only to taste. Once you get it the way you want, make sure you let it simmer to lock in all the flavors. Reduce burner for a few minutes until ready to eat. Then put serving size into bowl and crumble turkey bacon (or lean meat) over top.

Jodee, this sounds good - although I will cut out the potato. I'll try it this weekend. I haven't seen any postings from you for awhile. I hope everything is going well for you. You were such an inspiration for me after the hurricanes. I kept thinking that if you could adjust to everything you were going through, I should be able to adjust too. Good luck. Celeste
