Need Some Help

I hate to admit it but I have been living on eggs and hamburger because they are so quick and easy to fix.

As a school teacher with all the benchmark testing and data plus parent contacts plus lesson plans plus grading... I work at least 12 hour days. I come home exhausted and just want to eat my dinner and relax or go to my belly dance class. I need some tasty EASY quick recipes. Any one have any favorites?

These are not recipes per say, but I buy baked frozen meatballs (Rosina Italian Style) and heat them up with my favorite tomato Pasta sauce & grated cheese on top. You can make some pasta if you have to make dinner for someone else.

- Caprese salad-(slice(s) of fresh mozzarella, slice(s) of tomato, fresh or dried basil, balsamic vinegar, a tiny bit of olive oil, ground black pepper.

-I haven't made this yet, but I plan on googling some easy crockpot recipe that includes chicken tenderloin & a jar of pasta sauce or red pepper sauce or cacciatore sauce...you get the picture.

I make deviled eggs with splenda and keep them in the fridge for a snack. Crock pot cooking can be pretty easy with only a couple of ingredients to through in it when you get home its ready for you. There is also always tuna salad and chicken salad, Oh and rotisserie chicken at the grocery store with a bag of salad and you got dinner. And there are some really good garlic butter and herb fish fillets in the frozen food section that are very very good. I like them a lot but can get a little expensive.

Viola, If you have a Sav A Lot near you, they have some great deals on individual servings of fish. I paid about a dollar each for tilapia filets a couple of weeks ago. They are single-serving, so I can just put one in a pan with some lemon and italian dressing and they cook in minutes. Great when I'm hungry and have had a long day! :)
