Festive Sleeve Meals

Hi all,

we are having a family Christmas on the 26th, but I wanted to have something "nice" on Christmas Eve and Christmas Day for me and the hubby but somehow I can't come up with anything. Roast, turkey, goose etc. are all way too much for the 2 of us and with only one eating really :-)

Who has some festive ideas for Christmas dinners?

Well you could cook a small turkey breast and potatoes and then you can just eat a small portion of it. I find it takes me a long time to eat just my little portion so spending the time with him having dinner may be a nice way to celebrate.

I agree with the turkey breast idea. I have the "cajun injector" and they make a yummy marinade that's roasted garlic and herb, or you can make your own. I use OJ, lots of spices and butter when I don't have any ready made marinade.

Green bean casserole made with greek yogurt, and cream of mushroom Soup is yummy. If you can tolerate cauliflower, I love roasted cauliflower mock mashed potatoes with cheese and bacon.
