Celery, apple and walnut stuffing

Celery, apple and walnut stuffing

  • 100g (4oz) quinoa
  • 1 large onion, chopped
  • (40g) 1.5 oz margarine (I'd use butter)
  • 350g (12oz) celery, finely chopped
  • 1 dessert apple, roughly chopped
  • 100g (4oz) chopped walnuts
  • salt and freshly ground black pepper

Place the quinoa in a pan and cover with Water. Bring to the boil and cook for about 15 minutes or until the grain is soft. Drain.

Meanwhile, fry the onions in the margarine until soft. Add the celery and walnuts and continue cooking for 5 minutes. Mix all ingredients together in a bowl. Season well and use to stuff the neck cavity of the turkey.

*Me personally I'd skip the margarine and use butter. And instead of water I'd use chicken broth or something with some flavor. Also skip the walnuts and add water chestnuts, apples to cranberries. Looks like you can change it up alot to your personal liking. The rest sounds good but I don't have any idea on the nutritional value of anything.

This was absolutely wonderful!!! Loved in at Thanksgiving and will make it for Christmas!! I also used the chicken broth instead of butter....I stay away from butter all together...And it had so much flavor.
