Eggplant ? Moussaka

Any one have trouble with eggplant?? I found a low fat and carb recipie I want to try. Or if any of you have such a recipie please share. I am really hungry for a little of that!!

Hi! I had a bit of eggplant this weekend and it was fine. It was an appetizer at an italian restaurant--pan fried eggplant stuffed with ricotta w/marinara sauce. I think the sauce made it a little mushier, so it was easy to eat. (And it was sooo good--wanted to eat it all, but only ate 1 eggplant roll for my lunch).

I am newly banded and only have 1cc in my band, so I suppose that could be why it went down so easy.

I love eggplant, so am hoping I'll be able to continue to eat it after my next fill. Hope you find a good recipe and that you are able to eat it with no problem!
