spaghetti squash!!!! Who knew???!!!

:thumbup: This is going to save me! As many of you...I assume...I love love love pasta. I found a recipe on Rachel Ray's website that called for spaghetti squash, ricotta cheese, peas (you can substitute) and a jar of sauce. OOOOOH my....can I say it was delish....and "low" in carb....and almost just as good as my old plate of pasta. I didn't get that carb overload/coma afterward either. I had never tried spaghetti squash before....I don't know why...but now I need to research other recipes for when I have a spaghetti/carb craving! Just had to share.....yum!

I've always wanted to try it but I don't care for squash. Is it really that good?

What was the recipe called? I love spagetti squash it's my carb fallback. The shitake miracle noodle is pretty good too :thumbup:

doesn't taste like squash at all! looks like pasta too! Who knew?

I love spagetti squash to! I tried it for the first time last year after me and my VERY picky 10 year old saw it on Emeril we made a regular meat spagetti sause to top it with and we both loved it. Its even good alone with salt and pepper

Thanks....I can't wait to try it. I love squash and I did try the spaghetti squash a few years ago and loved it.

this sounds yummy...my only question is where and how do i get and prepare spaghetti squash? i am on full liquids for another week...then mushies and so forth...i am REALLY looking forward to some real food!

you can usuallyget it at any local grocery store when its in season. Just cut in half length wise take seeds out ; rub with olive oil,salt and pepper. put in in a shallow dish cut side down in about 1/4 inch water and bake at 350 untill soft then just use a fork or spoon to scoop it out.
