This is an OLD Weight Watchers recipe. Very Yummy and if you are counting points they are 1 point per muffin! VERY filling!
Six Week Muffins
6 cups Complete Wheat Bran Cereal (Kellogg’s)
½ Box Fiber One Cereal
1 ½ cups sugar (Or equal sugar sub.)
5 Cups Flour (wheat flour works well too)
5 tsp. baking soda
2 tsp. salt
4 beaten eggs (Or egg sub)
½ Cup Lighter Bake (I have never been able to find this so I use applause instead)
2 tbs vanilla
2 Quarts Low fat Buttermilk
2 bags raisins (I use cranberries myself)
Instructions
Mix together all dry ingredients the add others. Mix the night before so batter will soften. Spray muffin pans with non-stick cooking spray. Bake @ 400 degrees for 15-20 minutes.
*** You can keep the batter in fridge for up to 6 weeks.
This makes a LARGE batch and you need a LARGE bowl!! I have done one of two things, I either make half a batch or make the whole thing, bake and freeze them.

I do not have the carb count because this is an OLD weight watchers recipe and I don’t think counting carbs was happening back then J
