Gallstones

I found out I have gallstones and I’m getting surgery next Monday. I am trying to eat low-fat. Some people that have had gallbladder issues say stay away from cheese, coffee , red meats, gassy veggies, eggs. My doctor just said to just stay on a very lean low fat diet. I am technically doing that because of my gastric sleeve. I was eating cheese now I feel like what can I eat. Can I eat low fat cheese? I just don’t want anymore attacks till I get this gallbladder out. I am just trying to see if anyone on here is in a similar situation. I’m confused do I listen to the doctor or people who have had a gallbladder issue.
