    I love cooking shows! My husband calls it food porn Regardless, I get great ideas, then tweak them to be what I like. I will be the first to tell you I am NOT a foo foo cook (I love to watch it, but have you priced saffron threads??) Anyway - I don't even cook with raw onion or shallots - I use the ground up stuff from my spice cabinet....and no one has complained yet...and it simplifies my life....
    So on with my latest and greatest!
    Preheat oven to 350
    Spray your muffin tin - I have a 6 cup tin that works great for this - regular size muffins...
    In a bowl mix
    1 small container ricotta (I used part skim)
    1 small container cottage cheese (drain moisture off - I use paper towels, use a cheese cloth if you have one)
    half cup mozzerella
    half cup of the REAL shredded parmesan - not the white powder out of a can (see - I can be a food snob!)
    I package of minced spinach (I used the steam in a bag stuff from HEB, then SQUEEZED the heck out of it with paper towels!)
    1 large egg yolk
    some onion salt
    garlic powder
    Mix well
    Spoon into muffin tin, top with some provolone (I love cheese! - can be mozzerella if you want)
    Bake for about 35 minutes - watch you cheese on top - no burning!!
    Let set for about 7 minutes and enjoy!
    I am almost a month out of surgery and eat almost a full muffin tin - but not quite -
    So yummy!
    I know someone smarter than me will plug it into your online doomahickie and tell me the Protein and calories...each portion is about 4 oz. I did have some mix left over.....my dog loved it too!

    Sorry for the late reply- had a sleep study last night and lets just say not much sleep was had lol
    Slim here are recipies for some of the things I mentioned. I'm a measure by eye girl on most of the things i cook but I'll try to give an estimate. Remember all these things can be adapted, things can be added, substituted and portions can be changed. This is just a guesstimate
    Califlower rice
    1 head of cauliflower
    Cut into chunks and pulse in the food processor until it has the look and feel of rice. Put in a bowl and microwave for 3-5 minutes (depending on microwave) And voila!
    chicken coconut curry over 'rice'
    Boneless skinless chicken breast
    1 bell pepper
    1 medium onion
    1 zuccini
    Scallion
    1 tsp curry powder
    1tsp light brown sugar
    1tsp cumin
    1 can light coconut milk
    Cut the chicken into bite size pieces. Brown in a pan. Take them out and set aside and saute the onion, scallion and bell pepper (I diced them up into small pieces) when they are slightly translucent add in diced up zuccini. Cook until slightly tender, then add in the cumin and curry powder. Cook for a few minutes until the spices are fragrent then add in the coconut milk. Cover and simmer for 5 minutes or until the milk cooks down enough so it's not so soupy. Add in the tea spoon of brown sugar (optional, it adds a little sweatness to counter the spice of the curry and in a big pot its not much.) Add the browned chicken back in and serve over califlower rice. This was awesome!
    Fried 'rice'
    1 cup of riced cauliflower
    2 tsp of low sodium soy sauce
    1 egg
    scallion
    I sprayed a skillet with a little PAM and added one scrambled egg. Chop it up in the skillet as I went, then added my 'rice'. Let cook for a minute, added soy sauce and let it 'fry'. Added in some chopped scallion before serving.
    Moc Mashed potato bake
    2 cups for riced cauliflower
    2 cloved of garlic
    a few tbs of FF sour cream (you could use greek yogurt I bet for more protein)
    chopped fresh parsley
    1/2 cup for FF shredded mozerella cheese
    Put cauliflower, garlic, souce cream and parsley in a food processor and pulse until creamy. I mixed with most of the shredded cheese after I was done and put it in a baking dish and sprinkled a bit of the cheese that was left on top. Baked 350 for 10-15 minutes.
    Bean shrimp and garlic over zuccini 'pasta'
    1 can of white Beans
    8 shrimp (mine were jumbo)
    2 cloves of garlic
    2 zuccini
    Parsley
    Splash of chicken stock
    Cook the shrimp till translucent and then take out of pan. Sauteed the beans in a tsp of EVOO, added the garlic and parsley. Let the beans cook down until soft, added the chicken stock so it wasn't so dry. Add the shrimp back in and shut off. Slice the zuccini with a veg pealer, or mandolin (It takes some practice. Google 'zuccini noodles/pasta' and it should help.) Once sliced microwave for a few minutes until 'al dente' Serve the shrimp and bean mixture over the 'pasta' and done!
    The pizza crust recipie you can find all over online- google low carb pizza crust. It was just riced cauliflower, shredded cheese and Italian seasonings. I made one with a chicken, mushrooms and onions on top and the other I did something different and put slicked fresh mission figs and goat cheese with a drizzle of balsamic vinagar. Also really nice with some arugula on top!

    I use mine usually once every 2 weeks or so. I use it for a lot of different things. Dishes:
    Lechon asado (Cuban pork roast)
    Chili - regular or white
    I roast chicken in mine (with olive oil, sea salt and rosemary)
    I'll bake meatballs in mine
    Stroganoff
    Chicken adobo
    Beer & cheese soup (one of my family's fav)
    Lasagna
    Pulled pork sandwiches
    Tikka masala
    So many more

    As you can tell, lots of oven dishes will translate to the crockpot. You'll just need to make a few adaptations. E.g. when I roast chicken in mine, I place the chicken on foil balls. That allows the juices to drain down so that the chicken doesn't "stew".

    While working in the heat I suggest G2 better know as gatorade2... SF popsicles, plus I got a canteloupe n blended up with ice n Water.. I made Popsicles of the canteloupe and flavored water...yummy.... Wait I also did this with pineapples tooo..

    So I'm currently in the midst of a 3 month pre op diet. My surgeon doesn't do a pre op diet per say but I have a personal goal to loose 20-30lbs pre surgery. So I've been really cutting cabs out. My go to during this? Cauliflower!
    I riced some cauliflower (put it in a food processor then nuked it) and it has the texture of rice. Served some chicken in lowfat coconut curry sauce over it!
    I made moc mashed potato bake with low fat sour cream, lots of garlic, riced cauliflower and low fat motzeralla cheese baked in the oven (this was DELISH!)
    I made pizza twice with it as the crust- once with chicken mushrooms and onions on the pizza and another time with goat cheese and fresh figs- yummy!
    Just wanted to let you guys know there are SO many carb swaps out there and cauliflower is one of the best! I also sliced zucchini on a mandolin and used it as 'Pasta noodles' under Beans and shrimp one night. Another great idea!
    Keep experimenting- doesnt have to be boring! Can't way until surgery- I'm determined to make this work as not just a diet but a life style!

    Hi all! Well today is day10.. I'm doing great! The Lord was good to me, I never got gas pains or anything else. I took pain meds the day of surg(Wed) thurs or pain med Fri and sat. Am and that was it...I did my walking n drank very lil... I was stubborn.. It is so hard to make ur self drink when u don't want to...I got tired of the canned broths, Gatorade2, but my fiancé took me to a lil ole in the wall on the south side of town n got some mex soup,,caldo de res but drank the broth...ohhhhhh it was so goooddddd....yummmmmm.we also got some fruit flavored water, like cantaloupe water, watermelon water, pineapple water. No sugar. I make sure my water n drinks r nice and cold...I also made some Popsicle out of them as we'll... My tummy is so happy....I'm 10 days postoperative. The dr said I can try some yogurt, sugar free puddings.mushy mash potatoes, .I'm soooo happy.". But I eat very slowly n 1/2 tsp at a time..I know how to appreciate these lil baby steps...my tummy lets me know when enough is enough..the dr has me on nectar whey protein isolate to help me get my protein in...it's tasteless n I mix it with whatever I eat or drink..I'm down 22lbs.my clothes r loose n some old. Smaller sizes r fitting me.. Finally .....I do go through some emotional times but after a good cry I'm fine...if my urine gets dark I try n drink more...I'm a happy girl for now, whew!

I got a lil dry cause my lips were starting to crack n my urine got concentrated...I am so sick of the protein drinks and the gatorade2...I'm worried about getting dehydrated after surgery when I go home. I hope I ll be able to go to work after 2 weeks. Please say a prayer for a speedy recovery and peace of mind.. Thank you all

    I just got approved! But now I'm scared! I'm afraid of the pain that everyone seems to have postoperative. I'm afraid of losing my hair. I'm worried if I'll be able to get all my nutrients in.... Could u Plz tell me ur exp. immed after surg n the days that followed

    Hi, I'm new to the site and going through the approval process to get sleeved. I was originally planning to get the lap band but after lurking on this site, I believe the sleeve is the right option for me. I understand why you can't drink beverages at the same time with the band since it would just wash through but why can't you with the sleeve? Appreciate any feedback!

    I am going to Dr. Yu. I am in the beginning stages. I go for a nut. consult tomorrow and EGD Thurs. He did a gastric bypass on my dght. a couple of yrs. ago and she has lost more that 100lbs. She was very satisfied with him and I think he is outstanding so far. Mine will be a band revision. I had a lapband 5/09 and lost about 60 llbs. I went to get a fill and the band had slipped. My original surgeon removed the fluid and would have done gastric bypass or a sleeve ,but he is leaving the area and recommended I go to Houston. That was a couple of months ago and I have already gained close to 20lbs. It is time to do something ... Hopefully they will get all my info sent to the insurance co and I will be approved for the surgery. I am glad to find some others going to Dr. Yu. Please keep me updated on your progress and I will do the same.

    Hey everyone!
    I have been MIA for a few days. I was busy getting sleeved
    Ponce de leon and Trish are amazing!
    I have to admit it was slightly more painful than I imagined -- really just the gas pains. When people mentioned gas pains I thought normal gas, like abdomen, but I was wrong. I woke up with terrible pain in my chest. I thought I was having a heart attack. Other than that, everything has gone well. I am in the hotel now and am relaxing.
    I still have some gas pains that nothing seems to be helping but oh well.
    Now time to nap!
