I like air fried tofu (just marinaded in soy sauce and garlic) although it might not be good for those with recent surgeries. But I'm 19 years out. Lol. It can be chewy.

I LOVE my air fryer! I think it's the best way to cook most veggies. You should avoid using aerosol cooking spray like Pam because it leaves a sticky residue that builds up in the air fryer over time. I have a Misto oil sprayer that I fill with avocado oil or olive oil, and for most veggies, all I do is lightly spray them with oil, toss with seasonings, and air fry them. Some of my favorites:

The air fryer is also great for cooking chicken wings. I don't even add any oil -- just sprinkle with seasonings (you can go with just salt and pepper, especially if you're going to add sauce, or a meat rub, etc.). And chicken burgers. And chicken/turkey sausage. It's also great for reheating anything baked that would get soggy in the microwave. I don't use it for meat all that much because I usually use my Instant Pot to cook meat, but anything you want crispy is better in the air fryer. I also sometimes make "pizza" in the air fryer -- a 1 net carb Mr. Tortilla plus marinara sauce, mozzarella, and turkey pepperoni.

I make salmon in the air fryer. I just season with salt and whatever else I'm feeling like that day, spray both sides with olive oil and "fry" at 380. Time depends on the type of salmon. For wild sockeye, 7 min seems to be the sweet spot. For farm-raised - 9 min works for me. I've done cod the same way too. I've made shrimp in it too, but you have to watch the timing as it's so easy to overcook. Usually about 5-6 min. for shrimp.

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!

      Having gall bladder surgery in a few days and I so hope the recovery is easier than the one from the modified DS! I could use a bit of luck/pep talk for a change. I'm starting to be able to walk around without experiencing dizziness, but it would be great if the random pain in my chest and abdomen would go away!!
