Instant Pot! Good recipes and ideas?

Ok then, I just ran the instant pot steam test, cleaned the pot and I have Baby back ribs in the pot. 30 minutes from now they should be fall off the bone tender.

I am going to have play with this thing all week!

Wow you got yours awfully fast, who did you order from? Mine just left Indiana but will get here tomorrow by 8pm. So I hope to be cooking in it on Thursday!

Ok so I learned what not to do today in my instant pot. Hubby works for 4:30pm to midnight has really been screwing with both of our diets because I am feeding him at 12:30 in the am. It doesn't work. 1. I end up hungry and eating a snack with him when I really should be in bed sleeping

2. He is gaining weight because he is eating so stupidly

So we decided to buy the instant pot so I could make "lunch" our bigger meal of the day and then I can have something small for dinner which I prefer to do anyway.

I have not been shopping so I decided to make chicken with marinara sauce and throw some Pasta in it. I had a doctors appointment so I wanted to throw it in the pot and then we would eat around 2:30 today when we got back and before he had to go to work.

I cut up mu breast into 3 pieces each and browned them in the pot in olive oil. Sautéed onion, garlic a small amount of Tomato paste. Added a cup of red wine and deglazed the bottom of the pot. Then I added a can of tomato sauce, petite diced tomatoes, basil, oregano, dried Italian seasoning, 2.5 cups of chicken stock and 1/2 lb of Pasta. I used Campanella because it was all I had in the house. Hubby eats it, I usually don't.

Set the pot for 5 minutes on manual as per instructions on Pinterest and let her rip. My house smelled like an Italian restaurant in less than 2 minutes.

Them we left after the pot shut off and went to warm. That is where I made my mistake LOL. When we got back 2 hours later I opened the pot to serve lunch and my pasta was way overlooked and my chicken dry.

So I learned that you need to keep the pieces of chicken larger and once your pot turns off, instant release it and do not leave it on warm it will continue to cook your pasta because of all the heat in the pot. DUH! If I would have thought about it for 5 minutes, I would have figured that out without basically ruining my dinner.< /p>

Too dry for me to eat at all. It had fabulous flavor but eech.

So, back to the pot tomorrow night to try something else. I am anxious to try a pot roast in there with fresh carrots and baby potatoes.

If you like chicken the recipe for Thai chicken thighs on pressurecookingtoday.com is amazing (some good recipes on that site) and it freezes well too.

Just looked in the cupboard/fridge and I have the makings so I know what I'm having for dinner tonight, together with cauliflower rice.

Ok so tonight I experimented with stuffed green peppers and so far it is my favorite. They tasted better than when I make them in the oven and they cook for an hour or more.

I used 1lb of ground beef - I used 85% because I didn't want them to be dry

2 green peppers

1/3 cup of minute rice. (You can leave this out)

1 onion sautéed in pot ahead of time

Salt

Pepper

Egg

2/3 cup of chicken stock

I preheat the pot on sautée and sautéed my chopped onion in about tablespoon of olive oil. Then I took the ground beef, onion, rice, salt, pepper and 1 egg and mixed it until it was combined.

I sliced my peppers in half and cleaned out the seeds and ribs.

I filled each pepper with ground beef mixture

On the bottom of pot, pour 2/3 of 15oz can of tomatoe sauce, add about 1/2 cup of chicken stock or Water (I used 2/3 of a can but I would back off a little on the stock or Water to 1/2 cup)

Then on the trivet place your peppers

Cover pot until it is closed and plays music

Set the thingy (don't know what you call this LOL) to sealing

Press manual and use the arrows to get to 15 minutes.

Wait until your pot is done (it beeps at you), I waited 5 minutes and then released the rest of the heat.

Within 2 minutes I could smell the green peppers. It made my poor little pouch go crazy because I was running late with dinner and it was after 8pm already.

#Djmohr, Your recipe sounds fabulous! I did buy the cook book from Laurel Randolph. But so far I'm finding what you've been cooking is far greater!

I have not used my pot yet, had a last couple of stress filled days. Tonight is date night, movie and dinner. So I'm going to try boneless ribs on Saturday then on Sunday will try your green peppers.

You must be an awesome cook! I have not really cooked so much since my first husband passed away 16 years ago. My new husband and I have been together 2 years and married a year and a half now. Keep putting those recipes out there or even send them to me by pm.

Pot roasts turn out great...nice and tender if you give it enough time.

I have always loved cooking. I learned as a very young girl from my grandmother and my mother. I can remember standing on a chair next to the stove learning to make homemade Pasta and gnocchi.

Then when my granddaughter Aja was born, she lived very close. I started teaching her to cook and bake. Her Mom doesn't cook at all so Aja is the primary cook in the family, she is 12 now and because I taught her to use recipes and change them she is doing that quite regularly.

She now lives 6 hours away in Minnesota so I don't get to see her as often.

:(

A week from Monday she is coming to stay with us for two weeks before school starts. We will be baking and cooking. Already she is sending me recipes she wants to try. Many of them things that I cannot eat but she wants to learn how to make raised donuts and bread so I will teach her how.

I am making a pot roast for dinner Monday night in my instant pot. If it goes well, I will share the recipe or my learnings.

I copied the green peppers recipe down and will try that tomorrow. I did the rib ones today, used boneless ones. My husband said they were really good, myself I'm having a very hard time with my dry and burning mouth and that effects my taste buds.

I'm sure the green peppers will come out great!

I have trouble with pork ribs of any kind. I used to love love love them and honestly other than pork tenderloin, I don't eat it. I want to love it I just simply don't. I am hoping the instant pot will make sure great pork chops. I have a recipe I found on Pinterest for merlot mushroom pork chops in the pot. I will try those because they definately will have a gravy or sauce making it easier to eat but even baby backs don't make me happy.

I would much rather eat beef, chicken, shrimp or fish. The most lean cuts. I think it might be all the fat in pork ribs and if you don't have it, the meat turns out too dry. I cook my pork tenderloin to where it is very slightly pink and still juicy. Same thing with center cut pork chops but they don't make me as happy.

      Having gall bladder surgery in a few days and I so hope the recovery is easier than the one from the modified DS! I could use a bit of luck/pep talk for a change. I'm starting to be able to walk around without experiencing dizziness, but it would be great if the random pain in my chest and abdomen would go away!!

      Today was rough...
      I've been experiencing a headache all day today that just won't go away. I'm thinking it's now progressing into a migraine. Does anyone else get headaches from taking vitamin B12? I did some research and learned that usually a lack of B12 causes headaches. But I've noticed when I take it, I have reoccurring headaches. 😫
