2 months out and wondering if I can have coconut flour or oat flour? instead of taken in regular flour since it's much healthier. I'm asking because I been making Protein Bars which is very healthy and I wanted to make Protein muffins, only thing is, it's asking for coconut flour or baking soda, I wanna make sure I don't ever take in baking soda, baking powder and regular flour ever again

I was using coconut flour 2 months out without any problem. I used it for thickening, mainly. Great substitute!

Why not baking soda or baking powder? What don't I know about these lol

You're going to have a hard time making those muffins rise without any leavening.

I found a Protein pancake mix called kodiac cakes at costco and albertsons. I use that for my muffins with eggs, milk, and any fruit or nuts. It's a mix of flours with a great punch of Protein. It might be a good option too

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
