Let me count the ways: roasted, steamed with garlic, baked if it's something large like eggplant or spaghetti squash, blanched so they retain crispness, and just plain old raw. I also like tossing a bit of spinach, fresh or frozen into a Protein Shake.< /p>

Saute with olive oil and garlic, add a bit of chopped jalapeno pepper, love it cooked hot and quick! Early on after bypass, my pouch tolerated soft steamed veges, but now 8 months out, any way I want to fix them that is healthy.

I love love love vegetables pretty much every way you can make them. I don't use canned vegetables ever. I use frozen or fresh veggies multiple times a day.

Roasted, sautéed, steamed, grilled and raw. Yummo!

Tonight I made one of my fave Weight Watchers recipes, Brussels sprouts sautéed with garlic and caramelized onions, with some balsamic vinegar added at the end. Mmmmmmm.

I also like to roast all sorts of veggies in the oven with a little olive oil, salt, pepper, and whole cloves of garlic.

I make Greek style green Beans with garlic and tomatoes.

Hmmm... apparently I like garlic.

i actually found great recipes on Pintrest (actually, my bestie did)...

look up Spaghetti Squash with cashew "sauce" (to die for!)

Zucchini spaghetti wtih Avocado pesto

I also love juicing, so as soon as i'm about a week to 2 weeks post op (im only 2 days post op now), i'm going to start juicing again. Baby carrots juice so sweet, so I usually use that as a base

Artichoke hearts

10 pieces = 50 calories per artichoke heart quarter. Olive oil, essence of Emeril "bam!, liquid smoke & Montreal steak seasoning.

Grill or roast in the oven.

add to salads or steamed vegetables.

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
