Fish? Need suggestions.....

I'm definetely not a cook, but my mom is an awesome one, and she makes fish on Thursday nights for dinner (shopping day, so fish is fresh!). We're fortunate enough to live on the coast so some of the recipes that call for lobster might end up costing more if you live in the midwest, but I'm sure imitation would work good. I'll have her dig up some recipes and I'll post them on here tonight for you guys to try!

I eat Redfish. It is really good, saute onions and green oinions in Olive oil and then put the fish in a pan and put the onions on top and cook it for a few min. It is really good. I don't know where you would buy it. My husband fishes often and we live near the gulf. I also cook bacon wrapped shrimp occasionly, I marinate them in wine, salt, pepper, and garlic powder.< /p>

I like any kind of mild white fish. Basa is nice so is orange roughy, and I love cod. I usually bake with lemon and dill, or tomatoes and onions, lemon, garlic and capers are good also. I think fish can be made with just about any type of seasonings.

I NEVER liked fish before being banded. IT is my favorite now, that is all I eat when we go out.

The best thing I can suggest is Tilapia for a beginner. I personally can not cook it to my liking at home. When you eat out at a restaurant, order the Tilapia.

I also LOVE salmon, catfish, and well... that is all I have tried :)

Being from New England we have a huge selection of white fish. My favorites are Haddock and Cod. I am not a big fish fan, but it is good for you. I usually rub it down with melted butter or olive oil and sprinkle it with Good Seasons salad dressing pack mix. I like the Ranch and parmasan cesar. One packet can be saved and used for several meals. Some times I use it on chicken too.

I broil the fish for about 7 minutes on each side or until flaky and white.

it is very good mixed with cooked veggies.

Yes, Redfish is VERY good!!! Bacon wrapped shrimp also!!! :(

I love most all fish - but the key is to buy it either VERY fresh (flown in from the boat this morning) or flash frozen in those vacuum sealed packages.

The best fish is available at Trader Joe - the flash frozen, vac sealed kind - and they usually have a great variety.

Swordfish is good - nice firm fish that tastes great grilled like a steak.

We go to Alaska every other year to fish and there are lots of ways to cook both the salmon and the halibut that we bring home. I am like you, salmon isn't my favorite but I love the halibut. One easy receipe that even the kids love is to:

deskin the halibut

season with lemon pepper and whatever else you like.

take ritz crackers (amt depends on how much fish you are cooking) and put them in a zip lock bag and pound them until they are fine.

Coat the halibut in a milk and egg mixture and the put it in the zip lock bag and coat it there. That make the crust.

Put it in a glass pan (works best) Drizzle with butter and cook on 375 for about 8 min. This might vary on how thick the fish is. We love it!!! I hate it because I have a freezer full of this and salmon and because I am pregnant I can only eat the salmon.

The whole "fresh factor" is my problem, living in rural New Mexico, the only fresh fish we get are river & lake....trout, kokanee (sp?) salmon, bass, walleye trout, and some catfish. They are not plentiful in the stores fresh---so we get it ourselves fishing, and snagging salmon in season, but otherwise we are out of luck. I know people who ice fish---but we aren't ones to do it. So it is mass produced, box fish for us through the winter if we want fish.

Rivers and lakes are full of bottom feeders, but they taste fishy and nasty---not gonna eat that!!!

Living on the river we get fresh fish when desired, but I still prefer to get my fish from the Schwan's Man. I really like the unbreaded Blue Hake, and the stuffed sole minus the stuffing which my hubby gladly eats. I must be weird because I hate Tilapia, maybe its the way it was cooked the first time.

Kat - try Trader Joe's. If you don't have one in NM - cross the border into AZ. Those flash frozen, vac sealed packaged fish are pretty good. Almost as good as right out of the lake.

Awww Beannie if it were only that easy!!!! I am about 50 miles from the "4 corners"....but for miles beyond, in any direction between AZ & NM it is reservation. No Trader Joes I can guarantee!!! Closest I can try is Albuquerque, and it is 286 miles!!! Might follow a Schwans suggestion and check it out....I only wish we had more options. I am in a town of about 7,500, and only 10 miles from one closer to 75,000...but it is not the clientelle as a general rule to lure that type of business. I could go to any grocery in town and buy fresh MUTTON---gag me!!! But fish----fuggedaboudit!!!!!

I do want to mention that you can get all kinds of fresh seafood on line these days. And the quality is great from most places. With overnight delivery it can be fresher than what's in the store by a long shot. Here's one good site:

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!

      Having gall bladder surgery in a few days and I so hope the recovery is easier than the one from the modified DS! I could use a bit of luck/pep talk for a change. I'm starting to be able to walk around without experiencing dizziness, but it would be great if the random pain in my chest and abdomen would go away!!
