Lasagna Cupcakes!

Had the taco cupcakes the other day..yum..making these tonight!

General grocery will have them... I have used ground beef and ground chicken both are delightful...there is a photo in my gallery.

How do you get to photo gallery ?

I am still on pre-op but this thread and the emilybites website gave me hope for solid food in the future. So cannot wait!!!

wow, this sounds great...also you can make the meat with taco seasoning and make a taco meat with cheese in the wonton too...saw that one on pinterest,

Made these for dinner tonight- 1 was more than enough for me (plus salad). The other adults in my family each ate 2. We all voted this is a definite do again!!!! Portion controlled.

Lasagna Cupcakes

2 cup marinara sauce (I just used 1 jar)

3/4 pound ground beef or turkey

24 wonton wrappers

8 ounces shredded mozzarella

3 ounces Parmesan cheese

4 ounces Ricotta cheese

(optional) basil for garnish

Preheat oven to 375 degrees. Spray muffin tin (12) with cooking spray.

Brown beef and season with salt and pepper. Drain. Add sauce. Mix.

Begin with a wonton wrapper and press it into the bottom of each muffin tin.

Spread with a small spoonful of Ricotta cheese.

Top with a little meat sauce then some parmesan and mozzarella.

Use around 2 teaspoons of all the ingredients depending on your personal preference.

Repeat layers ending with cheese.

Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out. Garnish with basil (if desired) and serve.

Oh my gosh as a single woman I would make these all the time and freeze them with 1-2 cupcakes per bag. I'd then defrost as needed. In considering my post-op life, I'd forgotten all about these!

when did you get sleeved and do you know the nutritional value?

What about adding some chopped up chicken? It'd be like chicken parm...and some added Protein.< /p>

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
