    I haven’t tried tofu since surgery but if it doesn’t sit well I'm definitely going to try this out! I wonder if it would hold its shape in a stir fry? yummm hot and sour soup sounds good right about now lol

    Day 15: I'm most grateful for my dimples. When I was younger I use to absolutely hate them. It was mostly because people would comment on them and pinch my cheeks. I didn't like the attention, I was a shy kid. Growing up I've learned to appreciate them mostly because it was a feature that was passed down in my family. My great grandfather had them, then my grandpa, then my dad, and now me. Its makes me feel more connected to my family.

    I was using fitness pal for sometime but I ended up switching to Carb Manager and I love it. Its more visual and cleaner looking. If you get the premium version you can connect your fitbit or apple watch to it too.

    Tonight’s dinner: Greek salad with grilled chicken. Did black olives instead of kalamata. Chicken came out super good since I had it marinating overnight. Im slowly incorporating raw veggies into my diet. I’m still scared to make it a daily thing this soon in.

  9. I keep stalling too but I think its water related for me, but it seems like you're doing good. You've lost a ton of weight! Congrats! How many days a week do you exercise?

    Day 13: I'm most grateful for the fall. I love the weather, the activities that come with it like apple picking, or even racking leaves, and the anticipation of the holidays. Mirror Mirror Question: How is everyone's hair these days? Its horrible! I'm losing a ton of hair and I have so many split ends. Some days I just want to shave it all off and rock the bald look. Thankfully no one has noticed my hair loss because my hair is so thick and long but its still driving me insane. I knew going in that this was a side effect, but DAMN! 😩

    Here it is @sillykitty (FYI I do not use measurements) Ingredients: 1 large yellow onion chopped into small pieces 4 cloves of garlic chopped Oil (olive, canola or vegetable) 1 chicken bouillon cube 1 beef bouillon cube 4 generous spoons of Sofrito (use a soup spoon make sure to over scoop .... if that makes sense) Salt Adobo Garlic Powder Oregano (two tablespoons... guessing) 4 packs of Sazon Goya 2 cans of Gandules with the liquid Instructions: 1. In a rice pan with a little hot oil fry your chopped onions and garlic. Stir them while they cook on medium heat. 2. Once the onions & garlic are cooked half way through, add 4 large spoons of the sofrito, and the beef and chicken cube. Mix everything well and cook for a few minutes. (If ingredients start sticking to the pan, add a little water) 3. Season your mixture with salt, a good amount of garlic powder, and a good amount of adobo. Add the oregano and the 4 packets of Sazon Goya. Mix well and cook for another minute or two. 4. Next, add your two cans of Gandules (do not drain). 5. Add water to the pan - a little less than half way of the pan. Mix everything well. 6. Wash two cups of rice. Set aside. 7. When the mixture boils, add the rice, stir again, and cook on medium heat until most of the water evaporates. (Before the water evaporates, try it to see if it needs more salt or seasoning) 8. Once most of the water evaporates, cover pan with its lid and cook on low for about 20 minutes or until done. Tip: A good way of knowing you put the correct water and rice ratio is to grab a fork and stand it up in the middle of the pan with the rice and water (do this right after you add the rice to the water and you've stirred). Let go of the fork. If it stays standing up for a couple of seconds, you got the perfect ratio. If it keeps falling and wont stand on its own then there’s too much water and your rice will come out mushy. I dont know if this trick is a universal thing or Peruvian/latino thing lol Here's what some of the ingredients look like. You can find them at your local supermarket in the international or Latin aisle. Last pic is optional. Some people add those olives in it at the end. This rice is called Arroz con Gandules. Its a Puerto Rican rice a family friend showed us how to make. If you google it, you'll find many variations. The way my friend showed me is my favorite though, and I've tried a ton, especially at parties.

    Sunday & Monday: (Ate the same thing both days) Much better than Saturday! For lunch I made pan seared chicken breasts stuffed with broccoli and cheese. Didn't take a pic of it, I got too excited to eat it and forgot. Dinner: Made my bf spare ribs, rice, and a small salad. I posted the pic of the rice because I caved & took two bites of it.... It was super hard to resist because its one of my favorite kinds of rice to make but the two small bites took away my craving. My dinner was a can of tuna with light mayo, celery, and two wasa crackers. Took me all night to finish.

    Playing catch up today: Saturdays Lunch: Went to an Armenian fest and was planning on sharing the below plate with my bf but I just couldnt do it. Its rice pilaf, a side salad, losh (grilled ground lamb patty), and kufta (stuffed meatball with lamb and herbs inside). I had like two bites of the kufta, it was super soft but I started getting that stuck feeling in my throat. I just couldn't digest it and I felt like crap after that. The whole time I was trying hard not to puke. Lamb will have to wait. Later on that day I went to a late halloween party and ate like four salami slices off that skull head platter and that was my food for the day. There were chicken wings at the party too but I just couldnt eat them. My friend dyed them black to look like bat wings and it just grossed me out lol. Overall not a good eating day...

    Day 12: What 3 people in life are you most grateful for? Besides God, I’m most grateful for my siblings, my dad, and my boyfriend. I know its only 3 but I want to throw my bff in there too. She has been the most faithful friend I’ve ever had, a god sent. B-Side Question: What would you tell past/future you if you could? I would tell myself that life’s too short, tackle your weight now so that you can enjoy being young like other girls your age. If you don’t do it now, you will regret it later. Get the surgery! You’re not taking the easy route or cheating by getting the surgery. Also, stop thinking you can handle it all. It doesn’t make you weak asking for help. You don’t always have to be so strong and tough…

    I’m a bit behind with this, its been a crazy weekend! Day 9: What place have you traveled that you are most grateful for? I’ll go with NYC! I just love the whole vibe. I go every year and each time I go, I find something new I love about the city. My favorite time to visit is in December, a couple weeks before Christmas. I love the holiday markets, Christmas décor, shows, etc. I don’t think I’ll ever get tired of going! B-Side Question: How has your S/O been handling all of the changes since WLS? He’s been amazing. Throughout this process and even before my decision he’s always been very supportive of me. As corny as it may sound, he believed in me even when I didn’t believe in myself. He’s happy I’m losing weight and it has even motivated him to live a healthier lifestyle. Luckily for him, he really doesn’t need to lose much weight, but he’s been meal prepping to avoid snacking and has been trying to gain more muscle. Day 10: What are you most grateful for in your childhood? I’m most grateful for my dad. He was my rock during my childhood because he was my mother and father and raised me on his own. I owe him everything for that. He worked so hard to make sure I had everything and that I would never feel that void of not having a mom. Day 11: What movie are you most grateful for? There are too many!! Here’s the list of a few: ALL Marvel films, especially Avengers & X-Men (hence my username) Harry Potter All the John Wick movies (IM OBSESSED) The new Star Wars movies Blockers Gone Girl Prisoners Savages 12 Years a Slave Coco Girls Trip Django Straight Outta Compton Fast and Furious movies Southpaw Ex-Mechanica

    Hi everyone! TGIF! I cant say that enough lol I woke up feeling great knowing its Friday and that my weekend starts today. For lunch I made sopes (mexican dish) its basically a thick homemade tortilla with its edges slightly lifted with black beans, grilled steak, lettuce, cotija cheese, and a red sauce made out of tomatoes and dry peppers. You cant really see it but I also added diced onions and made a green tomatillo, serrano & avocado sauce. Its buried underneath somewhere. I ate one sope minus the tortilla and the rest were for my bf. I'm going to try to find a recipe for a healthier version of the tortilla so that way I can actually eat it normally instead of just the toppings.

    Same! And yeah I agree, the 1st was one of the most memorable. It’s tough to choose but I have to say the 4th, the Goblet of Fire. The 4th is where (for me at least) things get REAL. It was so intense with so much going on! You got the competition happening, other characters introduced, "moody" setting him up, Dumbledore trying to distance himself from Harry, and the connection in Harry's mind with Voldemort building. Harry's lonelier than ever in this one. Don't even get me started on the ending! Voldemort coming to life, Harry seeing his parents for the first time once he got sucked into the Triwizard cup and brought into the graveyard, his parents helping him escape, and Cedric dying..... mind blown! 🤯 I've also seen the 4th so many times that my DVD broke. Sorry lol I get carried away.

    Day 6: New day, new opportunity and so far so good. No cheating, no temptation, just sticking to my planned meals. I'm getting blood work done today to see how my vitamin levels are. Hopefully everything is fine. Honestly, I'm grateful for ALL nature and its creatures but I'm most grateful for the sky. Ahhhh the sky... whats not to say, you are beautiful in all your forms. I love looking up during the storms, during the colorful sunrises, and during the cool sunsets. Its a good representation of life. We have those cloudy gray problems, we have those colorful exciting days, and sometimes we have warm calmer days. Its all so beautiful no matter the circumstance. I'm especially grateful for the cloudy sky's and storms. Its what makes me stronger and I've learned to appreciate them. A while back I was watching the show called The Chef's Table on Netflix and this particular episode was about pastry chef Christina Tosi. She was talking about the struggles she faced while trying to make it in NYC as a pastry chef. She was working crazy hours, she was always tired, she was broke, and she was away from her family. I remember her saying that even though she was going through all that she was "blissfully in love with the journey." That's what I think of when I look up at the sky, regardless of how the day is going. I'm learning to be blissfully in love with the journey and through the obstacles. Here are three pictures I took a while back. I'm obsessed with capturing pictures of the sky. Its crazy how strong the colors were! No filter needed! At the time I was using an old phone so the quality is not the best. The blue one with the lake is at a park in the middle of the day, the pink one is a sunset, and the last one is a sunrise.
