    Hi all!
    I am 4 months post sleeve. My tummy still prefers softer Protein. I went to Starbucks and had their Egg Bites. They are delicious! This inspired me to create my own version at home. My version is made in muffin tins and baked since I don't have a Sous Vide cooking device. They turned out so good! And you can add fun stuff to make them even tastier. Recipe follows:

    For 5-6 Egg Bites (I eat only one at a time but they store well in the fridge, so I have them for the whole work week), you will need:
    6 eggs
    1/3 cup half & half (or whole milk)
    1/4 cup cheese- I use Gouda, but any kind will do.
    Dash of salt & pepper
    Add ins: I use green onions, roasted red bell pepper and crisp bacon pieces and cream cheese. (You could also use spinach, kale, green chilies, turkey sausage, the sky is the limit!)
    Muffin tin
    food processor or blender

    Process:
    Preheat oven to 325. Spray Pam into 6 muffin tins.
    Put the eggs, milk or cream, and cheese in a food processor or blender. Whirl and blend until egg mixture is light and fluffy, about 30 seconds.
    Pour mixture into a bowl, and stir in green onion, bell pepper, bacon pieces or any other ad-ins you love.
    Spoon mixture into muffin tins, leaving a half inch from the top of each cup.
    Super yummy extra: At this point, I add a bit of cream cheese into each cup. I use about the size of a marble of cream cheese. I LOVE how these taste with this extra kick!
    Put them in the oven and bake for 20-25 minutes, or until semi-firm. Let them cool before popping them out of the cups.

    Nutrion (per one egg bite) Protein= 11, Carbs= 2, Calories= 215*
    The calories could be cut back (if desired) by using lower fat cheeses and milk and skipping the cream cheese).

    I'm just seeing your post now, and wanted to say that you totally rock. You have done an amazing job, and have inspired many of us here! I can relate to the mental game. My weight started packing on around age 13 and I now realize a mental aspect of it was that it was a protective shell against attention to my body. But that's another story for a new thread. Congratulations to you and your new and lifelong ability to grab your sabotaging brain by the throat and recognize it, look it in the face and drop it to the ground. You look truly amazing and beautiful. Thanks so much for sharing!

    I totally second that about the broth! The broth saved me in those days. It breaks up the monotonous sweet with some much needed salt! Yep, you can do it!

    My weigh in and final for the challenge is 141. I feel good, despite not losing anything. Better endurance and energy. At least the holidays are over!
    Thank you to EVERYONE for a fun challenge. You all did so great. I will be taking final weigh-ins throughout this week. Hats off to all of you, and cheers to a HEALTHY new year!!!!

    I just went and looked at the spreadsheet.

    Everyone did so well! I didn’t reach my goal but I did the best I could and I am proud to be where I am now in January and looking forward to more losing this year, and taking part in more challenges with you all! We did it. We LOST SOME WEIGHT OVER THE HOLIDAYS. Anyone ever do that before?? I know I haven’t. (6 months out)

    Whoops, I never got my final weight in for this challenge last night. Yesterday I saw 158 on the scale for the first time, and it was there again today. I am losing verrrrry slowly but steadily.

    i was supposed to get down to 154, which was too ambitious, but I didn’t know. But for the first time in my adult life I LOST WEIGHT DURING THE HOLIDAYS. I baked and baked and baked. I love to bake goodies. And I ate how much of the sweets I baked? How much did I eat? NONE NONE NONE NOT ONE BITE.
    No one but you guys can understand that, how huge that is. Each week I throw away a plate of Cookies or something because my family just can’t eat that much. Meaning I used to eat 10 of them a day probably. I don’t eat Desserts at all. And I get still lots of pleasure from baking them, it now is like crafting or woodwork or ceramics (that smell really good) to me. Why would I gain weight at the holidays now? I d like to hope this lasts forever. I eat Protein, and a bit of veg and seeds/beans, and I’m not going to pig out on them, ever. Right? I don’t eat processed carbs any more.

    Thanks for this challenge. I am very happy to be in the 150s even if I am 5 lbs more than I imagined. I consider it a total success.

    Forgot to post yesterday, 215!! Goal was 220. Next goal- get below 200 which i have not seen in probably 20 years!!!
    Thank you so much Kel for running this. It is so helpful to have accountability friends who understand the challenges with this process, especially since I am still learning myself!
    Looking forward to a new challenge to stay on course!
